I noticed another small shop has opened near Pingzhou selling Xiashan crispy noodles. I’d never tried this kind of noodle before, so since I happened to be passing by, I went in to give it a try.
Xiashan belongs to the Chaoshan area, and this crispy noodle is a bit different from the soup noodles I usually eat. The noodles have a springy, chewy texture — not soft and limp. You can add cuttlefish balls, shrimp, fish, and other toppings to the soup. Overall it has that familiar fresh, sweet flavor typical of Chaoshan.
I’ve always liked food from the Chaoshan area. The seasoning isn’t too heavy, and it relies mainly on the natural umami of the ingredients. This place felt similar: the soup was clear and light, and the toppings went well together, without feeling greasy or cloying.
If you’re making a special trip from far away just to eat this, I don’t think it’s really necessary. But if you live near Pingzhou and sometimes don’t know what to eat, coming here for a simple bowl of noodles is quite a good option.
Personally, I’d give it about 80. It’s the kind of small shop that can go into your everyday dining rotation. If you’re interested, you can come and try it yourself.
