Coming to Sichuan, I really think you have to fit in a meal of mom-style pig trotter soup (laoma tihua).
Today after visiting Dujiangyan, in the evening I suddenly felt like drinking hot pig trotter soup. I opened the review app to search, saw this place was on the must-eat list, and drove over.
I thought since it was past normal meal time we wouldn’t have to wait, but as soon as we arrived—wow—it was still completely packed inside.
Business is really good.
Their pig trotters aren’t simply boiled plain. I heard they are slowly simmered with herbs like dang gui and chuan xiong for four to five hours. The soup comes out very rich, but doesn’t taste greasy. The trotter has been stewed until extremely tender, and separates easily with a gentle pick of chopsticks. It’s soft and glutinous in the mouth, especially the pig skin part—I really like that.
Another thing I must praise—there are so many free side dishes!
There are around twenty-something kinds, and you can just go pick whatever you want. They go especially well with the trotter soup and rice. At this price plus so many free side dishes, I think the value is quite high.
Our kid also ate very happily and kept saying the pig trotters were delicious.
I myself really like this soft, sticky, melt-in-the-mouth texture.
It was just meant to be a casual late-night snack, but it turned out to be one of the more satisfying meals of the day.
Next time I come to Dujiangyan, I’ll probably come back specifically for this bowl of trotter soup.
