The dishes here are almost all in their original flavors, without excessive seasoning. What you taste is the most authentic flavor of the ingredients themselves. There are no complicated presentations or deliberate gimmicks; everything is simple and natural, yet it leaves a lasting impression. Perhaps it is this simple and restrained style that makes people feel at ease and easier to remember. This is probably why I have always loved Henan cuisine—light yet profound, and the more you eat, the more you appreciate it.
